Disfrutar Kept the elBulli Method and Dropped the Name

The Archive in Action

When elBulli closed in July 2011, Ferran Adrià's former head of research and two of his senior chefs — Oriol Castro, Eduard Xatruch and Mateu Casañas — did not abandon the techniques they had spent years refining. They catalogued them. The trio spent time at the elBulli Foundation consolidating methodology before opening Disfrutar in Barcelona's Eixample district in 2014. The name means, simply, "enjoy" — an explicit step away from any cult of personality.

The technical inheritance is direct. Spherification, hydrocolloid-set gels, savoury meringues, multi-texture single bites: all of it arrived intact from Cala Montjoi. What changed was the operating model. ElBulli ran a six-month season, took reservations for roughly fifty covers per night and operated closer to a funded laboratory than a commercial restaurant. Disfrutar runs year-round, serves around forty covers per service in a whitewashed room off Carrer de Villarroel, and must pay for itself every week.

That constraint sharpened the cooking rather than softening it. A technique worth running at Disfrutar must be stable enough to execute identically on a Tuesday in February and a Saturday in August. The result is a tasting menu — currently around thirty courses — in which each plate is designed for repeatability as well as surprise. Dishes that were showpieces at elBulli have been redesigned with mise en place in mind: the prep logic is built backwards from service, not forwards from the idea.

The kitchen is small. The brigade is proportionally tight. Where elBulli could afford extended plating stations and exploratory prep time because service was infrequent and subsidised by outside income, Disfrutar operates under a food cost percentage discipline that any full-service kitchen would recognise. Two Michelin stars arrived in 2018; Michelin added a third in 2024, placing it in the guide's top tier.

The distinction from its predecessor is structural, not philosophical. ElBulli asked what was possible. Disfrutar asks the same question inside a room that has to fill, price a cover that has to earn, and plate a dish that has to be identical at cover one and cover forty. The elBulli archive is not a museum piece here — it is a working toolkit, edited by economics and made more precise by the pressure of nightly service.
